Gingerbread Loaf

1 1/2 cups flour
2 tsp ground cinnamon
1 tsp ground cloves
2 tsp ginger
1 tsp salt
1/2 cup canola, scant
1 cup white sugar
1 tsp baking soda
1 cup applesauce

Preheat oven to 350 degrees F. Grease and flour a 9-inch square pan or a loaf pan greased with Earth Balance.

In a medium bowl, stir together flour, cinnamon, cloves and salt. Set aside.

In a large bowl, cream butter and sugar until light and fluffy.

Dissolve baking soda into applesauce and mix into oil. Add flour mixture. Mix until smooth. Pour batter into a loaf pan.

Bake at 350 degrees F for 40 to 50 minutes (I do 45 minutes) or until a toothpick inserted into center of cake comes out just slightly sticky.

No picture at this point. I ate it too quickly! I'll have to make it again soon and photograph it.
